Meatloaf in Spicy Tomato Sauce

This is the perfect penny-wise dish for the whole family to share on a cool winter evening.

Ingredients

For the Spicy Tomato Sauce:

  • 1 x 50g sachet Rhodes Quality Tomato Paste
  • 1 x 400g can Rhodes Quality Tomato Chopped and Peeled
  • 15 ml (1 Tbsp) sunflower oil
  • ½ onion, chopped
  • 1 clove garlic, crushed
  • 125 ml (½ cup) prepared beef stock
  • 5 ml (1 tsp) chilli flakes
  • 45 ml (¼ cup) coriander, chopped
  • salt and freshly cracked black

For the Meatloaf:

  • 6 slices of fresh white bread, crusts removed
  • 80 ml (â…“ cup) milk
  • 15 ml (1 Tbsp) sunflower oil
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 500 g beef mince
  • 5 ml (1 tsp) ground nutmeg
  • 5 ml (1 tsp) dried oregano
  • 2.5 ml (½ tsp) ground paprika
  • salt and coarsely ground black pepper
  • 1 egg

Method

  1. Heat the sunflower oil in a small saucepan.
  2. Add the onion and fry until softened then add the garlic and fry for a few minutes more.
  3. Add the stock, the Rhodes Quality Tomato Paste and the can of Rhodes Quality Tomato Chopped and Peeled and bring the sauce to the boil.
  4. Add the chilli flakes and the coriander.
  5. Then reduce the heat and simmer for 10 minutes.
  6. Season to taste and set aside.
  7. To make the meatloaf, break the bread up into a bowl and pour over the milk.
  8. Leave to stand for a few minutes and then fork into a paste.
  9. Heat the oil in a frying pan and fry the onions until soft then add the garlic and fry for a few minutes more.
  10. Simmer for a few minutes and then cool slightly.
  11. Place the beef mince in a large bowl. Add the bread paste.
  12. Add the cooled onions and all the herbs and spices.
  13. Add the egg.
  14. Mix well until all ingredients are evenly blended then season generously.
