Brown Rice, Chickpea, Lentil & Bean Bowls

Minimal ingredients and minimal fuss, this pantry bean bowl is nutritious, filling and economical, great for loadshedding.


  • 250 ml (1 cup) brown rice
  • 1 x 410 g can Rhodes Quality Chickpea & Lentil Casserole
  • 65 ml (¼ cup) coriander, chopped
  • 2 x 410 g can Rhodes Quality Butter Beans in Curry Sauce
    Serving suggestions:
  • 2 avocados, peeled and sliced
  • poppadum crisps
  • chopped coriander
  • chili flakes


  1. Cook the brown rice according to the package instructions, drain.
  2. Heat the Rhodes Quality Chickpea & Lentil Casserole.
  3. Add the chopped coriander and toss to mix.
  4. Heat the Rhodes Quality Butter Beans in Curry Sauce.
  5. Divide the rice between 4 bowls.
  6. Add the chickpea and lentils and the butter beans.
  7. To serve, top with the avocado slices, and poppadums and sprinkle with chilli flakes and coriander.
