Ingredients
- 1 x 410 g can Rhodes Quality Butter Beans, drained and rinsed
- 125 ml (½ cup) Rhodes Quality Grated & Spiced Beetroot in Vinegar, drained
- ¼ cucumber, chopped
- 125 ml (½ cup) grated carrot
- Juice of ½ lemon
- salt and freshly cracked black pepper
- To serve: pumpkin seeds and chopped spring onion
Method
- Place the Rhodes Quality Butter Beans and Rhodes Quality Grated & Spiced Beetroot into a bowl.
- Add the cucumber and the carrot and toss lightly to mix.
- Squeeze over the lemon juice and season to taste.
- Sprinkle with pumpkin seeds and chopped spring onion.
