Bean & Beetroot Salad

Nutritious salad for learning minds.

Ingredients

  • 1 x 410 g can Rhodes Quality Butter Beans, drained and rinsed
  • 125 ml (½ cup) Rhodes Quality Grated & Spiced Beetroot in Vinegar, drained
  • ¼ cucumber, chopped
  • 125 ml (½ cup) grated carrot
  • Juice of ½ lemon
  • salt and freshly cracked black pepper
  • To serve: pumpkin seeds and chopped spring onion

Method

  1. Place the Rhodes Quality Butter Beans and Rhodes Quality Grated & Spiced Beetroot into a bowl.
  2. Add the cucumber and the carrot and toss lightly to mix.
  3. Squeeze over the lemon juice and season to taste.
  4. Sprinkle with pumpkin seeds and chopped spring onion.

Serves 3-4 young children
