Chickpea and Corn Salad Cups

Crunchy colourful salad, perfect for little fingers

Ingredients

  • 1 x 410 g can Rhodes Quality Chickpeas, drained and rinsed
  • 1 x 410 g can Rhodes Quality Whole Kernel Corn, drained and rinsed
  • 4 x Rhodes Quality Dill Gherkins, chopped
  • 125 ml (½ cup) baby tomatoes, halved
  • ¼ cucumber, chopped
  • 2 x carrots, peeled and chopped
  • 5 ml (1 tsp) ready-made hummus

Method

  1. Place the Rhodes Quality Chickpeas, Rhodes Quality Whole Kernel Corn, and the Rhodes Quality Dill Gherkins into a large bowl and toss to mix.
  2. Add the tomatoes, cucumber and carrots and toss again.
  3. Season to taste with salt and pepper.
  4. Top with spoonful of hummus.
