Crunchy colourful salad, perfect for little fingers
Ingredients
- 1 x 410 g can Rhodes Quality Chickpeas, drained and rinsed
- 1 x 410 g can Rhodes Quality Whole Kernel Corn, drained and rinsed
- 4 x Rhodes Quality Dill Gherkins, chopped
- 125 ml (½ cup) baby tomatoes, halved
- ¼ cucumber, chopped
- 2 x carrots, peeled and chopped
- 5 ml (1 tsp) ready-made hummus
Method
- Place the Rhodes Quality Chickpeas, Rhodes Quality Whole Kernel Corn, and the Rhodes Quality Dill Gherkins into a large bowl and toss to mix.
- Add the tomatoes, cucumber and carrots and toss again.
- Season to taste with salt and pepper.
- Top with spoonful of hummus.
