- 200 g mozzarella, sliced
- 3 roma tomatoes, sliced
- 1 x 410 g can Rhodes Quality Peach Slices, drained
- fresh Basil leaves
- 15 ml (1 Tbsp) basil pesto
- 15 ml (1 tbsp) olive oil
- salt and fresh ground black pepper to taste
- to serve: balsamic glaze
- Bring the mozzarella and tomatoes to room temperature.
- On a large serving plate arrange alternating slices of mozzarella, Rhodes Quality Peach Slices, tomato slices and fresh basil leaves.
- Mix together the basil pesto and the olive oil and pour over the salad.
- Drizzle with the balsamic glaze and serve immediately.
