Peach & Tomato Caprese Salad


  • 200 g mozzarella, sliced
  • 3 roma tomatoes, sliced
  • 1 x 410 g can Rhodes Quality Peach Slices, drained
  • fresh Basil leaves
  • 15 ml (1 Tbsp) basil pesto
  • 15 ml (1 tbsp) olive oil
  • salt and fresh ground black pepper to taste
  • to serve: balsamic glaze


  1. Bring the mozzarella and tomatoes to room temperature.
  2. On a large serving plate arrange alternating slices of mozzarella, Rhodes Quality Peach Slices, tomato slices and fresh basil leaves.
  3. Mix together the basil pesto and the olive oil and pour over the salad.
  4. Drizzle with the balsamic glaze and serve immediately.
