Sweet orange marinade for braaied chicken
Ingredients
- 250 ml (1 Cup) Rhodes Quality Orange 100% Fruit Juice Blend
- juice of one lemon
- 65 ml olive oil
- 30 ml (2 Tbsp) Dijon mustard
- 2 garlic cloves, crushed
- 8 chicken pieces, parboiled
Glaze
- 65 ml  Rhodes Quality Orange 100% Fruit Juice Blend
- 30 ml (2 Tbsp) butter
- 65 ml honey
- 65 ml barbecue sauce
- 30 ml (2 Tbsp) Dijon mustard
Method
- For the marinade whisk together the Rhodes Quality Orange 100% Fruit Juice Blend, lemon juice, olive oil, Dijon mustard and garlic.
- Place the chicken pieces in a large resealable bag.
- Pour in the orange marinade and seal the bag pressing out excess air.
- Refrigerate overnight or for at least 4 hours, turning the bag over a few times.
- To prepare the glaze, place the Rhodes Quality Orange 100% Fruit Juice Blend and the remaining ingredients into a small sauce pan.
- Simmer over a medium heat for 15 minutes, whisk to blend well.
- Braai the chicken pieces over a medium heat.
- About 10 minutes before the end of cooking, begin to brush the chicken on all sides with the glaze.
- Braai to golden.
- Pour over any remaining glaze and serve.
