Mediterranean Style Two-Bean Bake

Flavourful side dish, perfect to add to a braai table

Ingredients

  • 30 ml (2 tbsp) olive oil
  • 1 x onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 x 410 g can Rhodes Quality Peeled and Chopped Tomato with Herbs
  • 1 x 410 g can Rhodes Quality Baked Beans in Tomato Sauce
  • 1 x 410 g can Rhodes Quality Butter Beans, drained
  • salt and freshly cracked black pepper
  • 45 ml (3 Tbsp) chopped fresh basil and flat-leaf parsley
  • 125 g feta cheese, crumbled

Method

  1. Heat the oil in a medium frying pan.
  2. Add the onion and fry until softened.
  3. Add the garlic and fry for a few minutes more.
  4. Add the Rhodes Quality Peeled and Chopped Tomato with Herbs and bring to the heat.
  5. Stir in the Rhodes Quality Baked Beans in Tomato Sauce and the Rhodes Quality Butter Beans.
  6. Remove from the heat and season to taste.
  7. Transfer the bean bake to a casserole dish.
  8. Sprinkle over the feta cheese and the chopped herbs.
  9. Bake in an oven preheated to 180℃ for 15 minutes or until the feta is melted and golden.
  10. Serve hot.
