Flavourful side dish, perfect to add to a braai table
Ingredients
- 30 ml (2 tbsp) olive oil
- 1 x onion, finely chopped
- 2 cloves garlic, crushed
- 1 x 410 g can Rhodes Quality Peeled and Chopped Tomato with Herbs
- 1 x 410 g can Rhodes Quality Baked Beans in Tomato Sauce
- 1 x 410 g can Rhodes Quality Butter Beans, drained
- salt and freshly cracked black pepper
- 45 ml (3 Tbsp) chopped fresh basil and flat-leaf parsley
- 125 g feta cheese, crumbled
Method
- Heat the oil in a medium frying pan.
- Add the onion and fry until softened.
- Add the garlic and fry for a few minutes more.
- Add the Rhodes Quality Peeled and Chopped Tomato with Herbs and bring to the heat.
- Stir in the Rhodes Quality Baked Beans in Tomato Sauce and the Rhodes Quality Butter Beans.
- Remove from the heat and season to taste.
- Transfer the bean bake to a casserole dish.
- Sprinkle over the feta cheese and the chopped herbs.
- Bake in an oven preheated to 180℃ for 15 minutes or until the feta is melted and golden.
- Serve hot.
