This is the perfect penny-wise dish for the whole family to share on a cool winter evening.
Ingredients
For the Spicy Tomato Sauce:
- 1 x 50g sachet Rhodes Quality Tomato Paste
- 1 x 400g can Rhodes Quality Tomato Chopped and Peeled
- 15 ml (1 Tbsp) sunflower oil
- ½ onion, chopped
- 1 clove garlic, crushed
- 125 ml (½ cup) prepared beef stock
- 5 ml (1 tsp) chilli flakes
- 45 ml (¼ cup) coriander, chopped
- salt and freshly cracked black
For the Meatloaf:
- 6 slices of fresh white bread, crusts removed
- 80 ml (â…“ cup) milk
- 15 ml (1 Tbsp) sunflower oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 500 g beef mince
- 5 ml (1 tsp) ground nutmeg
- 5 ml (1 tsp) dried oregano
- 2.5 ml (½ tsp) ground paprika
- salt and coarsely ground black pepper
- 1 egg
Method
- Heat the sunflower oil in a small saucepan.
- Add the onion and fry until softened then add the garlic and fry for a few minutes more.
- Add the stock, the Rhodes Quality Tomato Paste and the can of Rhodes Quality Tomato Chopped and Peeled and bring the sauce to the boil.
- Add the chilli flakes and the coriander.
- Then reduce the heat and simmer for 10 minutes.
- Season to taste and set aside.
- To make the meatloaf, break the bread up into a bowl and pour over the milk.
- Leave to stand for a few minutes and then fork into a paste.
- Heat the oil in a frying pan and fry the onions until soft then add the garlic and fry for a few minutes more.
- Simmer for a few minutes and then cool slightly.
- Place the beef mince in a large bowl. Add the bread paste.
- Add the cooled onions and all the herbs and spices.
- Add the egg.
- Mix well until all ingredients are evenly blended then season generously.
