Lentil & Sweet Potato Curry

Tasty, fast vegetarian curry packed with protein.

Ingredients

  • 15 ml (1 Tbsp) vegetable oil or ghee
  • 1 x onion, sliced
  • 500 g sweet potatoes, peeled and chopped
  • 2 x cloves garlic, crushed
  • 1 x 410 g can Rhodes Quality Tomato Indian Style
  • 1 x 410 g can Rhodes Quality Tomato Chopped & Peeled
  • 500 ml (2 cups) prepared vegetable stock
  • salt and freshly cracked black pepper
  • 1 x 410 g can lentils, drained and rinsed
  • (½ cup) fresh coriander, chopped
  • To serve: rice

Method

  1. Heat the oil in a large saucepan.
  2. Add the onion and fry until softened.
  3. Add the garlic and fry for a few minutes.
  4. Add the sweet potato and toss well to mix.
  5. Add the vegetable stock and simmer for ten minutes.
  6. Add the Rhodes Quality Tomato Indian Style and the Rhodes Quality Tomato Chopped and Peeled.
  7. Season with salt and pepper.
  8. Bring to a boil, reduce the heat to a simmer, and cook until the potatoes are tender.
  9. Stir in the lentils and the coriander and bring the curry to the heat.
  10. Adjust the seasoning if necessary and serve over rice.
