Tasty, fast vegetarian curry packed with protein.
Ingredients
- 15 ml (1 Tbsp) vegetable oil or ghee
- 1 x onion, sliced
- 500 g sweet potatoes, peeled and chopped
- 2 x cloves garlic, crushed
- 1 x 410 g can Rhodes Quality Tomato Indian Style
- 1 x 410 g can Rhodes Quality Tomato Chopped & Peeled
- 500 ml (2 cups) prepared vegetable stock
- salt and freshly cracked black pepper
- 1 x 410 g can lentils, drained and rinsed
- (½ cup) fresh coriander, chopped
- To serve: rice
Method
- Heat the oil in a large saucepan.
- Add the onion and fry until softened.
- Add the garlic and fry for a few minutes.
- Add the sweet potato and toss well to mix.
- Add the vegetable stock and simmer for ten minutes.
- Add the Rhodes Quality Tomato Indian Style and the Rhodes Quality Tomato Chopped and Peeled.
- Season with salt and pepper.
- Bring to a boil, reduce the heat to a simmer, and cook until the potatoes are tender.
- Stir in the lentils and the coriander and bring the curry to the heat.
- Adjust the seasoning if necessary and serve over rice.
