Gherkin Pasta Salad


  • 250 g (3 cups raw) pasta spirals, cooked, drained and cooled
  • 250 g (1 cup) Rhodes Quality Dill Whole Gherkins, 65 ml (¼ cup) pickle juice reserved
  • 150 g (1 cup) cheddar cheese, cubed


  • 250 ml (1 cup) mayonnaise
  • 5 ml (1 tsp) Dijon mustard
  • 125 ml (½ cup) sour cream
  • 30 ml (2 Tbsp) fresh dill fronds, chopped
  • salt and freshly cracked black pepper


  1. Place the pasta spirals into a large bowl.
  2. Chop the Rhodes Quality Dill Whole Gherkins into even sized pieces and add to the pasta.
  3. Add the cheese and toss well to mix.
  4. To make the dressing place all the ingredients into a bowl.
  5. Add the 65 ml (¼ cup) reserved pickle juice and stir well to mix.
  6. Pour the dressing over the pasta salad and toss well to mix.
  7. Season to taste and serve.
