Be inspired by the great Cape Town Gatsby and take your boerie rolls to a new level.
Ingredients
- 30 ml (2 Tbsp) sunflower oil
- 2 x onions, sliced into rings
- 2.5 ml (½ tsp) chilli powder
- 1 x 410 g can Rhodes Quality Braai Relish
- 1 x 115 g sachet Rhodes Quality Tomato Paste
- 500 ml (2 cups) hand-cut potato chips
- oil for frying
- salt and brown vinegar
- 500 g boerewors, hot off the braai and sliced lengthways
- 1 x large soft baguette loaf
- Soft butter for spreading
- 2 x tomatoes, sliced
- Iceberg lettuce leaves, sliced
Method
- Heat the 30 ml (2 Tbsp) oil in a saucepan and fry the onion rings over medium heat until soft and browned.
- Remove half of the onions and set aside.
- Add the chilli powder to the remaining onion and stir.
- Add the Rhodes Quality Braai Relish and the Rhodes Quality Tomato Paste and bring to the heat.
- Simmer until thick.
- Heat the oil and fry the chips until done.
- Drain on paper towel.
- Season to taste with salt and vinegar.
To assemble: - Slice the baguette loaf lengthways but not all the way through.
- Smear with softened butter.
- Place a layer of lettuce on the bottom half of the baguette.
- Add a layer of sliced tomato.
- Add the sliced boerewors.
- Add the tomato sauce.
- Add the hot chips.
- Close with the top half of the baguette and serve.
