You can’t go wrong with fresh guacamole. It’s great with nachos, meat or plain crackers. Of course, we’ve gone one step further and have added crunchy whole kernel corn. Try it at your next braai.
Ingredients
- 2 whole avocados, peeled, pit removed
- 3 large tomatoes, chopped
- 1 small red onion, chopped
- handful coriander leaves, chopped
- salt and coarsely ground black pepper to taste
- juice of 1 lemon juice
- 1 x 400 g can Rhodes Quality Whole Kernel Corn, drained
- 15 ml (1 T) olive oil
Method
- Place the avocado flesh in a bowl and mash with a fork, making sure to leave the flesh relatively chunky.
- Add the tomato, onion and coriander and stir well.
- Season with salt, pepper and lemon juice.
- Toss the Rhodes Whole Quality Kernel Corn in the olive oil and stir into the avocado mixture.
- Serve immediately.
