Fruity Chicken Salad, perfect for summertime.
Ingredients
- 500 ml (2 cups) cooked chicken, shredded
- 125 ml (½ cup) roasted pecan nuts, chopped
- 1 x 410 g can Rhodes Quality Peach Slices in Syrup, drained
- 1 x green apple, chopped
- 2 stalks celery, sliced
- 125 ml (½ cup) chopped cranberries
- 45 ml (3 Tbsp) fresh coriander, chopped
Dressing - 15 ml (1 Tbsp) Pakco Mild & Spicy Curry Powder
- 15 ml (1 Tbsp) Rhodes Quality Tomato Paste
- 65 ml ( ¼ cup) hot water
- 250 ml (1 cup) mayonnaise
- salt and freshly cracked black pepper
Method
- Place the shredded chicken into a large bowl.
- Add the pecan nuts, Rhodes Quality Peach Slices, apple, celery, cranberries and coriander and toss well to mix.
- To make the dressing, whisk together the Pakco Mild & Spicy Masala Curry Powder,
- Rhodes Quality Tomato Paste and hot water until smooth.
- Whisk the curry paste into the mayonnaise and season to taste.
- Add enough of the dressing to the chicken salad to coat all the ingredients.
- Season again to taste.
- Refrigerate until serving.
