Cucumber and Chickpea Salad

Fresh, fast and refreshing braai salad.


  • Dressing
  • 80 ml (⅓ cup) olive oil
  • 2.5 ml (½ tsp) Dijon Mustard
  • 2.5 ml (½ tsp) brown sugar
  • Juice and zest of one lemon
  • 1 small garlic clove, crushed
  • salt and freshly cracked black pepper
  • 1 large English cucumber, thinly sliced
  • 1 red onion, finely sliced
  • 80 g feta cheese, cubed
  • 1 x 410 g can Rhodes Quality Chickpeas in Brine, drained
  • 45 ml (¼ cup) mint leaves, chopped
  • 45 ml (¼ cup) flat -leaf parsley, chopped
  • 45 ml (¼ cup) fresh dill, chopped
  • salt and freshly cracked black pepper


  1. To make the dressing, whisk together all the ingredients until smooth and well blended.
  2. Season to taste and set aside.
  3. Place the cucumber, red onion, feta and Rhodes Quality Chickpeas in a large bowl and toss to mix.
  4. Sprinkle over the herbs and the dressing and toss again.
  5. Leave to stand for 5 minutes.
  6. Season to taste and serve.


Serves 6 as a side
