Fresh, fast and refreshing braai salad.
Ingredients
- Dressing
- 80 ml (â…“ cup) olive oil
- 2.5 ml (½ tsp) Dijon Mustard
- 2.5 ml (½ tsp) brown sugar
- Juice and zest of one lemon
- 1 small garlic clove, crushed
- salt and freshly cracked black pepper
Salad - 1 large English cucumber, thinly sliced
- 1 red onion, finely sliced
- 80 g feta cheese, cubed
- 1 x 410 g can Rhodes Quality Chickpeas in Brine, drained
- 45 ml (¼ cup) mint leaves, chopped
- 45 ml (¼ cup) flat -leaf parsley, chopped
- 45 ml (¼ cup) fresh dill, chopped
- salt and freshly cracked black pepper
Method
- To make the dressing, whisk together all the ingredients until smooth and well blended.
- Season to taste and set aside.
- Place the cucumber, red onion, feta and Rhodes Quality Chickpeas in a large bowl and toss to mix.
- Sprinkle over the herbs and the dressing and toss again.
- Leave to stand for 5 minutes.
- Season to taste and serve.
