Crunchy and vibrant make-ahead braai side salad.
Ingredients
- 4 x celery stalks, chopped
- ½ x English cucumber, chopped
- 1 x 430 g can Rhodes Quality Pineapple Pieces in Syrup, drained
- 1 x 410 g can Rhodes Quality Chickpeas, drained
- 5 ml (1tsp) honey
- 5 ml (1tsp) lemon juice
- 65 ml (¼ cup) plain yoghurt
- Salt and freshly cracked black pepper
Method
- Place the chopped celery, cucumber, Rhodes Quality Pineapple Pieces and Rhodes Quality
- Chickpeas into a large bowl and toss to mix.
- Mix together the honey, lemon juice and yoghurt and season to taste.
- Pour the dressing over the salad and toss to mix.
- Refrigerate until serving.
