Butterbean & Chickpea Salad with Herb Dressing

Filling enough to serve on its own or as a side dish, this green salad is crunchy and full of flavour.

Ingredients

  • Green Dressing
  • 375 ml (1½ cups) mixed fresh herbs e.g. Basil leaves, flat-leaf parsley, chives, mint leaves
  • 1 garlic clove, peeled
  • juice of 1 lemon
  • 2.5 ml (½ tsp) Worcestershire sauce
  • 5 ml (1 tsp) honey
  • 30 ml (2 Tbsp) olive oil
  • 125 ml (½ cup) plain yogurt
  • 125 ml (½ cup) good quality mayonnaise
  • salt and freshly ground black pepper
  • Salad
  • 1 x 410 g can Rhodes Quality Butter Beans, drained
  • 1 x 410 g can Rhodes Quality Chickpeas, drained
  • 500 ml (2 cups) green lettuce, washed and chopped
  • 250 ml (1 cup) cucumber, chopped
  • 2 x green apples, cored and chopped

Method

  1. Place all of the ingredients for the dressing into a food processor.
  2. Process until the herbs are finely chopped and the dressing is well blended and light green.
  3. Season the dressing to taste with the salt and black pepper.
  4. Place the Rhodes Quality Butter Beans, Rhodes Quality Chickpeas, lettuce, cucumber and apples in a large bowl and toss well to mix.
  5. Spoon a generous amount of the dressing over the salad and stir to mix.
  6. Chill until serving.

Cooking Tip

Leftover dressing will store well in a sealed container in the refrigerator.
