Delicious appetiser, easy to prepare and full of flavour
Ingredients
- 125 g (1 packet) bacon bits
 - 1 clove garlic, crushed
 - 1 x 415 g Rhodes Quality Butter beans, drained and rinsedÂ
 - 125 ml (½ cup) chicken stock
 - 15 ml (1 Tbsp) fresh lemon juice
 - 65 ml (¼ cup) flat-leaf parsley, finely chopped
 - salt and freshly cracked black pepper
 - to serve: 4 slices baguette, lightly toasted
 - butter for spreading
 - parmesan cheese shavings
 
Method
- Heat a non-stick frying pan and fry the bacon bits until crispy.
 - Add the garlic and fry for a few minutes until fragrant.
 - Add the drained Rhodes Quality Butter Beans.
 - Add the chicken stock, lemon juice, parsley and seasoning and simmer until the butter beans are warm and the chicken stock absorbed.
 - Serve the seasoned beans on the buttered baguette slices and sprinkle with the parmesan cheese shavings.
