Brown Rice & Beetroot Salad

Filling and nutritious brown rice salad; travels well so perfect for picnics or office lunches.


  • 500 ml (2 cups) cooked brown rice
  • 30 ml (2 tbsp) flat-leaf parsley, chopped
  • 30 ml (2 Tbsp) fresh coriander, chopped
  • 30 ml (2 Tbsp) fresh mint leaves, chopped
  • 250 ml (1 cup) Rhodes Quality Grated & Spiced Beetroot, drained
    125 g feta cheese, crumbled
  • salt and freshly ground black pepper
    optional to serve: micro greens and chopped walnuts nuts


  1. Place the brown rice, herbs and spinach into a bowl and toss to mix.
  2. Add the Rhodes Quality Grated & Spiced Beetroot and toss lightly.
  3. Sprinkle with the feta cheese, micro greens and chopped nuts if using.
  4. Serve.
