Boerewors & Pineapple Braai Tart

Serve as an appetiser at your next braai or as a delicious lunch on its own with a fresh salad.

Ingredients

  • 250 ml (1 C) Rhodes Quality Braai Relish
  • 1 x 50 g sachet Rhodes Quality Tomato Paste
  • salt and freshly cracked pepper
  • 1 x 400 g roll Today’s ready-made puff pastry, defrosted
  • 1 egg, lightly beaten
  • 500 g boerewors, cooked and chopped
  • 1 x 410 g can Rhodes Quality Pineapple Pieces in Syrup, drained
  • 125 ml (½ cup) grated mozzarella cheese

Method

  1. Place the Rhodes Quality Braai Relish and the Rhodes Quality Tomato Paste into a small saucepan.
  2. Bring to the heat and stir well, then reduce the heat and simmer until thick.
  3. Season to taste and set aside to cool.
  4. Lightly roll out the Today’s puff pastry and trim into a circle slightly bigger than a tart pan.
  5. Spray the tart pan with non-stick spray and then line the bottom and the sides with the puff pastry.
  6. Brush the pastry with the egg and prick the bottom with a fork.
  7. Spread a layer of the cooled braai sauce on to the bottom of the pastry.
  8. Arrange the boerewors and the Rhodes Quality Pineapple Pieces on top of the braai sauce and the sprinkle with the mozzarella cheese.
  9. Bake the tart in a preheated oven that has been preheated to 190℃ for 20 – 25 minutes or until the pastry is crisp and golden.
  10. Serve hot.
