Fast and very simple, a lovely tangy salad for a braai
Ingredients
- 1 x 410 g can Rhodes Quality Butter Beans, drained
- 1 x 410 g can Rhodes Quality Chickpeas, rinsed
- 250 ml (1 cup) Rhodes Quality Grated and Spiced Beetroot in Vinegar, drained
- 250 ml (1 cup) Rhodes Quality Dill Whole Gherkins, drained and chopped
- 1 x red onion, finely chopped
- 65 ml (¼ cup) mixed chopped fresh herbs (e.g. coriander, parsley, basil)
- 30 ml (2 tbsp) fresh lemon juice
- 30 ml (2 tbsp) olive oil
- salt and freshly cracked black pepper
Method
- Place the Rhodes Quality Butter Beans, Rhodes Quality Chickpeas, Rhodes Quality Grated and Spiced Beetroot and
- Rhodes Quality Dill Whole Gherkins into a large bowl.
- Add the red onion and the mixed herbs and toss to mix.
- Mix together the lemon juice and the olive oil.
- Pour over the salad and toss again.
- Season to taste.
- Chill until serving.
