Two ingredient simple and easy dessert for hot summer days.
Ingredients
- 1 x box Rhodes Quality Trotters Jelly Raspberry Flavoured
- 300 g (1¼ cups) plain yogurt
- To decorate: fresh raspberries
Method
- Pour the Rhodes Quality Trotters Jelly Raspberry Flavoured powder into a large mixing jug.
- Add 190 ml (¾ cup) boiling water and stir until the sugar is dissolved.
- Add 190 ml (¾ cup) cold water and stir.
- Leave the jelly to cool to room temperature.
- Set aside 125 ml (½ cup) of the jelly.
- Whisk the plain yogurt into the remaining jelly until smooth.
- Divide the jelly mousse between 4 small bowls and refrigerate for at least 3 hours or until set.
- Pour a thin layer of the reserved jelly over each dessert and return to the refrigerator to set.
- Serve chilled topped with fresh berries.
