Yoghurt and Strawberry Jelly Mousse

Two ingredient simple and easy dessert for hot summer days.

Ingredients

  • 1 x box Rhodes Quality Trotters Jelly Raspberry Flavoured
  • 300 g (1¼ cups) plain yogurt
  • To decorate: fresh raspberries

Method

  1. Pour the Rhodes Quality Trotters Jelly Raspberry Flavoured powder into a large mixing jug.
  2. Add 190 ml (¾ cup) boiling water and stir until the sugar is dissolved.
  3. Add 190 ml (¾ cup) cold water and stir.
  4. Leave the jelly to cool to room temperature.
  5. Set aside 125 ml (½ cup) of the jelly.
  6. Whisk the plain yogurt into the remaining jelly until smooth.
  7. Divide the jelly mousse between 4 small bowls and refrigerate for at least 3 hours or until set.
  8. Pour a thin layer of the reserved jelly over each dessert and return to the refrigerator to set.
  9. Serve chilled topped with fresh berries.

Cooking Tip

Substitute your favorite Rhodes Quality Trotters Jelly flavour.
Note that this recipe uses a different amount of water to prepare the jelly than the package instructions.
