These Corn Pop Kebabs are so satisfying and filling – they’re guaranteed to become a new lunchbox favourite!
Ingredients
- 1 x 410g can Rhodes Quality Whole Kernel Corn, drained
- 1 egg, whisked
- ½ cup milk
- 1 tbsp oil or butter, melted
- ½ cup self-raising flour
- pinch salt
- herbs for seasoning
- vegetable oil for frying
Method
- Whisk egg then add melted butter or oil and milk.
- Add flour and mix well.
- Add Rhodes Quality Whole Kernel Corn, salt and herbs and combine well.
- Heat oil in a saucepan then add small spoonfuls of mixture.
- Fry over medium heat until golden brown then drain on paper towel.
- Leave to cool before threading onto a mini skewer or toothpick.
- Place in lunchbox and add your child’s favourite dipping sauce.
