Filling enough to serve on its own or as a side dish, this green salad is crunchy and full of flavour.
Ingredients
- Green Dressing
- 375 ml (1½ cups) mixed fresh herbs e.g. Basil leaves, flat-leaf parsley, chives, mint leaves
- 1 garlic clove, peeled
- juice of 1 lemon
- 2.5 ml (½ tsp) Worcestershire sauce
- 5 ml (1 tsp) honey
- 30 ml (2 Tbsp) olive oil
- 125 ml (½ cup) plain yogurt
- 125 ml (½ cup) good quality mayonnaise
- salt and freshly ground black pepper
- Salad
- 1 x 410 g can Rhodes Quality Butter Beans, drained
- 1 x 410 g can Rhodes Quality Chickpeas, drained
- 500 ml (2 cups) green lettuce, washed and chopped
- 250 ml (1 cup) cucumber, chopped
- 2 x green apples, cored and chopped
Method
- Place all of the ingredients for the dressing into a food processor.
- Process until the herbs are finely chopped and the dressing is well blended and light green.
- Season the dressing to taste with the salt and black pepper.
- Place the Rhodes Quality Butter Beans, Rhodes Quality Chickpeas, lettuce, cucumber and apples in a large bowl and toss well to mix.
- Spoon a generous amount of the dressing over the salad and stir to mix.
- Chill until serving.
