Minimal ingredients and minimal fuss, this pantry bean bowl is nutritious, filling and economical, great for loadshedding.
Ingredients
- 250 ml (1 cup) brown rice
- 1 x 410 g can Rhodes Quality Chickpea & Lentil Casserole
- 65 ml (¼ cup) coriander, chopped
- 2 x 410 g can Rhodes Quality Butter Beans in Curry Sauce
Serving suggestions: - 2 avocados, peeled and sliced
- poppadum crisps
- chopped coriander
- chili flakes
Method
- Cook the brown rice according to the package instructions, drain.
- Heat the Rhodes Quality Chickpea & Lentil Casserole.
- Add the chopped coriander and toss to mix.
- Heat the Rhodes Quality Butter Beans in Curry Sauce.
- Divide the rice between 4 bowls.
- Add the chickpea and lentils and the butter beans.
- To serve, top with the avocado slices, and poppadums and sprinkle with chilli flakes and coriander.
