Filling and nutritious brown rice salad; travels well so perfect for picnics or office lunches.
Ingredients
- 500 ml (2 cups) cooked brown rice
- 30 ml (2 tbsp) flat-leaf parsley, chopped
- 30 ml (2 Tbsp) fresh coriander, chopped
- 30 ml (2 Tbsp) fresh mint leaves, chopped
- 250 ml (1 cup) Rhodes Quality Grated & Spiced Beetroot, drained
125 g feta cheese, crumbled - salt and freshly ground black pepper
optional to serve: micro greens and chopped walnuts nuts
Method
- Place the brown rice, herbs and spinach into a bowl and toss to mix.
- Add the Rhodes Quality Grated & Spiced Beetroot and toss lightly.
- Sprinkle with the feta cheese, micro greens and chopped nuts if using.
- Serve.
