Dressing
- 250 ml (1 Cup) Rhodes Quality Peach 100% Fruit Juice Blend
- 65 ml (¼ Cup) olive oil
- 30 ml (2 Tbsp) Honey
- 15 ml (1 Tbsp) lemon juice
- salt and freshly cracked black pepper
Salad
- 200 g salad greens, eg, lettuce and rocket
- 1 x 410 g can Rhodes Quality Peach Halves, drained
- 250 g haloumi cheese, thickly sliced
- 15 ml (1 Tbsp) olive oil
- salt and freshly cracked black pepper
- 45 ml (3 Tbsp) almond slivers, lightly toasted

For a lovely airy dressing, prepare in an electric blender.
